Any combination of slaw vegetables work fine. For slaw, Napa cabbage (aka Chinese or Korean cabbage) is light, crunchy but mild-tasting. Don’t let the mild-taste fool you, Napa cabbage is loaded with antioxidants and low in calories. There are many ready-made “superfood” slaw mixes out there with kale, cabbage, chard, red cabbage, carrots, broccoli stem–or make your own (shop and support your local farmers market and see what’s in season!). Kale is an excellent source of vitamin K, vitamin C, vitamin A, manganese, and copper; a very good source of vitamin B6, fiber, calcium, potassium, vitamin E, and vitamin B2; and a good source of iron, magnesium. It all works well and doesn’t really require marinating time.

Ingredients

• 2 c shredded Chinese or Korean Napa cabbage, kale or mixed greens

• 1/4 cup shredded carrot

• 1/4 cup mild sweet chili sauce or My Sweet Hottie sauce

• 1 t Asian or dark roasted sesame oil

  
  

•  2T chopped green onions, fresh mint, basil or cilantro

• Crunchy mix-ins (optional): dash of white pepper, toasted sesame seeds, crushed uncooked ramen noodles or chopped peanuts or roasted soy nuts- YUM!
