Recipe: Kale Tomato Stir Fry
My mom loved using tomatoes in her stir fries. "Adds instant color, flavor and natural saltiness." The sweet tartness of the tomatoes balances out the hearty, slightly bitter greens. This one features kale and we enjoy it frequently in the fall and winter, but you can also substitute bok choy, cabbage or other seasonal vegetables and greens. Don't overcook the tomatoes at the end or else it become soupy--which has unintended, but still delicious consequences, slurp!

- 4 cups kale, chopped (large stems removed)
- 2 cups fresh tomato, cut in quarters
- 1 tsp garlic, minced
- 1 tsp vegetable oil
- 1/4 tsp roasted sesame oil
- Dash of salt
- Heat oil in skillet on medium high heat.
- Add garlic, stir fry 15 seconds.
- Add kale, stir fry 1 minute (turns bright green)
- Add tomatoes, sesame oil, salt and stir fry 15 seconds, just to heat through.
- Serve immediately
