Teriyaki Tofu & Grilled Scallions

  • One of my favorite comfort foods. Simple and tasty over rice, in a wrap, sandwiches or sushi rolls!
  • Ingredients
  • 1 pkg firm tofu
  • 1 cup sliced peppers, zucchini/squash and/or mushrooms
  • 2 Tablespoon vegetable oil
  • 1 Tablespoon soy sauce
  • ½ cup slivered green onions (2 inch)
  • ¼ cup vegetarian mushroom, oyster, stir-fry sauce blended with Thai sweet chili sauce
Instructions
  • Drain tofu, press between two plates to remove excess water.
  • Slice, fry with vegetables in oil.
  • Brown both sides about 5 min, medium heat.
  • Drizzle soy sauce or oyster sauce.
  • Add scallions near end with more sauce blend.
  • Serve atop rice or in a wrap, sandwich.
