Teriyaki Tofu & Grilled Scallions

- One of my favorite comfort foods. Simple and tasty over rice, in a wrap, sandwiches or sushi rolls!
- Ingredients
- 1 pkg firm tofu
- 1 cup sliced peppers, zucchini/squash and/or mushrooms
- 2 Tablespoon vegetable oil
- 1 Tablespoon soy sauce
- ½ cup slivered green onions (2 inch)
- ¼ cup vegetarian mushroom, oyster, stir-fry sauce blended with Thai sweet chili sauce
- Drain tofu, press between two plates to remove excess water.
- Slice, fry with vegetables in oil.
- Brown both sides about 5 min, medium heat.
- Drizzle soy sauce or oyster sauce.
- Add scallions near end with more sauce blend.
- Serve atop rice or in a wrap, sandwich.
